Orujo

Orujo is the Galician pomace brandy of north-west Spain, distilled from the skins, pips and stalks left after pressing grapes for wine and released clear, fiery and grape-scented at around 37 to 50 percent alcohol; the Spanish cousin of Italian grappa and French marc, it is the fierce, rustic farmhouse spirit that also forms the burning base of the ritual queimada.

Clear and fiery, orujo blanco leads with fresh crushed grape and grape skin over green apple and pear, with floral, grassy and herbaceous top notes and a pungent, warming spirit backbone at around 37 to 50 percent. The mouthfeel is dry, spirit-forward and hot, with a peppery bite and a clean, faintly bitter grape-skin finish; oak-aged orujo envejecido softens the burn and adds pale vanilla and dried-fruit warmth, while flavoured licores turn it sweet and herbal or coffee-rich. In the flaming queimada, caramelised sugar, coffee and scorched citrus overtake the raw spirit.
