Orgeat

Orgeat (French orgeat, Catalan-Valencian orxata) is a sweet, milky-white almond syrup perfumed with orange-flower water, drunk diluted with cold water as a cordial and used in bars as the almond backbone of tiki cocktails. Thick, opaque and frankly sweet, it tastes of toasted almond and blossom over a rounded sugar body, and belongs to the same old Mediterranean family of strained plant-milk drinks as tigernut horchata.

Undiluted orgeat reads as intense toasted-almond and marzipan lifted by a bright orange-blossom perfume over a heavy, glossy sugar body; the taste is emphatically sweet with a faint bitter-almond edge and a silky, syrupy weight rather than true fat-richness.
