The clementine is the small, deep-orange, glossy easy-peel mandarin of winter — usually seedless, markedly sweet and low in acid, with a loose, thin rind that slips off in one piece. It is the lunchbox and Christmas-stocking citrus, sold by the netful and eaten out of hand.
