The opah, or moonfish, is a large, deep-bodied open-ocean fish prized for its rich, firm flesh. Strikingly coloured — a silvery, rose-tinged body flecked with white spots and finished with vermillion fins and jaws — it yields several distinct cuts of meat that range from tuna-like loin to bacon-like belly.
