Old Pal
The Old Pal is a dry, spirit-forward Prohibition-era cousin of the Negroni — equal parts rye whiskey, dry vermouth and Campari, stirred over ice and strained up into a stemmed glass. Paler and drier than its sweeter relatives, it is a bracing, bitter aperitif built on grain-spiced rye rather than gin, a classic of the American expatriate bars of 1920s Paris.

Pale amber-red, the Old Pal smells of vivid bitter orange and aromatic Campari botanicals over the peppery grain spice of rye and the lean, faintly saline, wine-like note of dry vermouth. On the palate it is crisply bitter and dry — far leaner than a Negroni or Boulevardier, with only a touch of sweetness from the Campari set against a bracing rhubarb-and-orange bitterness — carried by warming rye spice, a whisper of oak and a long, dry, bitter finish at around 28 percent alcohol in the glass.
