Nougat is a chewy (or hard) confection built from whipped egg white, honey and sugar, set pale and glossy and studded with toasted almonds, pistachios and sometimes candied fruit. In the Mediterranean it is the torrone of Italy and the turron of Spain — the sweet of Christmas — sold in slabs that are at once airy, sticky and dense with whole nuts.
