Liqueur
Nocino
Nocino is a dark, almost black Italian liqueur made by steeping unripe green walnuts — husk and all — in alcohol with sugar and warm spices such as clove and cinnamon, traditionally begun around the feast of Saint John on the 24th of June, when the still-soft nuts are gathered before their shells harden.

Deep mahogany and syrupy, nocino leads with a bitter, resinous green-walnut aroma and a strong clove-and-cinnamon spicing, backed by caramel, coffee, dried fig and a cola-like, faintly medicinal depth. On the palate it is bittersweet — heavy sugar balanced against the astringent tannin and juglone of the walnut husk — viscous and warming at around 40 percent ABV, with a long, drying, spiced-nutty finish that lingers woody and slightly bitter. It is a digestivo built to close a meal, its bitterness cutting the sweetness rather than being masked by it.
