Nimbu pani is the classic homemade lemonade of the Indian subcontinent — fresh lime or lemon juice loosened with cold water and sweetened with sugar, then seasoned with a pinch of salt. Its name means simply "lime water" (nimbu, lime; pani, water). In its everyday form it is plain and thirst-quenching; in its more elaborate spiced form, usually called shikanji, it gains black salt, roasted cumin and sometimes pepper, ginger or mint for a savoury, tangy, slightly funky lift. Served ice-cold, it is the quintessential summer cooler of North India and a staple of roadside stalls.
