New York Sour
The New York Sour is a whiskey sour dressed up with a float of dry red wine — rye or bourbon shaken with fresh lemon and simple syrup, poured over ice, and then crowned with a slow float of red wine that sits on top as a crimson layer. It is one of the great visual cocktails, its two-tone amber-and-red look as much a part of the drink as its tart, wine-edged flavour.

Two-toned in the glass, the New York Sour smells first of bright fresh lemon and the warm grain-and-vanilla of whiskey, with a dark-berry, faintly winey lift from the red float on top. On the palate it is tart and lively — a clean citrus sourness balanced by simple syrup and the sweetness of the whiskey — before the dry, tannic, dark-fruit edge of the wine folds down through it, adding grip and a slightly drying finish. Rye brings peppery spice, bourbon a rounder caramel sweetness, and the whole drink lands crisp, dry and refreshing at around 18 percent alcohol in the glass.
