Micro mustard is the microgreen of mustard greens (Brassica juncea) — brown or Indian mustard seedlings cut at roughly one to three weeks old, when the plant is only a few centimetres tall with its seed leaves and the first true leaves. Tiny but ferociously flavoured, it concentrates the mature leaf's sharp, peppery, horseradish-like mustard bite into a single tender shoot eaten raw.
These cues are Mustard greens's, and hold across its varieties; where this one differs, its own page says so.
