Muhammara is the roasted red pepper and walnut dip of Aleppo, a cornerstone of Syrian and wider Levantine meze whose name simply means "reddened" in Arabic. Roasted red peppers and toasted walnuts are pounded with pomegranate molasses, garlic, olive oil, breadcrumbs and chilli — classically the fruity, moderately hot Aleppo pepper — into a thick, coarse, russet paste that is at once sweet, tart, smoky, nutty and gently hot. It is scooped up with warm flatbread, spread on the meze table alongside hummus and baba ganoush, and used as a relish for grilled meat, fish and kebabs.
