Buffalo mozzarella (mozzarella di bufala) is a fresh pasta-filata cheese made from the milk of the Italian Mediterranean water buffalo. Porcelain-white, glossy and springy on the outside, it breaks into soft, moist leaves that weep a milky whey when cut. Richer, sweeter and more intensely lactic than cow's-milk mozzarella, it is eaten fresh — at room temperature with tomato, olive oil and basil, or torn over pizza and antipasti.
