Mozzarella is a soft, fresh pasta-filata ("spun-paste") cheese, traditionally made from the milk of Italian water buffalo and now overwhelmingly from cow's milk. Mild, milky and faintly lactic-sweet, the fresh ball is springy and moist; the low-moisture, drier form is the cheese that browns and pulls into long strings on pizza.
