Mozuku is a fine, brown, mucilaginous seaweed native to the warm waters around Okinawa and the wider Ryukyu Islands of Japan. Eaten by the slippery, thread-like strand, it is most famous served chilled in sweet-tart vinegar as the small dish mozuku-su (a kind of sunomono).
What to look for, from glossy threads, thick clinging slip to cloudy, broken, slipping to mush.
