Morbier is a semi-soft raw-cow's-milk cheese from the Jura Massif of eastern France, instantly recognised by the thin black horizontal line of vegetable ash running through the middle of its supple, ivory paste. Mild, milky and faintly fruity with a gentle farmyard tang, it is a pressed, uncooked cheese pressed into flat wheels and matured for a couple of months on spruce boards.
