Monkfish is the prized tail of the anglerfish (Lophius piscatorius and its close relatives) — a grotesque, enormous-mouthed bottom-dweller that lures prey with a fishing-rod spine, yet hides one of the sea's best eating fish in its tail. Firm, dense, almost meaty and faintly sweet, the white flesh holds together where flaky fish fall apart, roasting, grilling and stewing without collapse, and its lobster-like bite has long earned it the nickname poor man's lobster.
