Mojito
The Mojito is the great Cuban highball — white rum lengthened with lime, sugar, fresh mint and soda water over ice, served tall and refreshing. Born in Havana, it is a long, low-strength cooler that pairs the crisp sweetness of light rum with sharp lime acidity and a wave of cool, garden-fresh mint, the whole drink lifted and softened by a splash of sparkling soda.

The Mojito reads first as cool, green mint and sharp lime — a bright, herbaceous lift off the top of the glass — over a clean, faintly sweet white-rum base. Fresh-muddled spearmint gives a garden-fresh, almost menthol coolness; the lime brings sharp, juicy citrus acidity; and a little sugar and the splash of soda round and soften everything into a long, easy refresher. Underneath sits a whisper of sugarcane and vanilla from the rum and a grassy, faintly tropical undertone, with a modest alcoholic warmth that the ice and soda keep gentle.
