Micro mizuna is the microgreen form of Japanese mizuna mustard (Brassica rapa var. nipposinica) — the seedling harvested at roughly one to three weeks, just after its first true leaves appear, when it stands a few centimetres tall on a fine white stem. It carries the clean peppery-mustard bite of mature mizuna in a smaller, more concentrated, delicate package, and is used almost entirely raw as a salad leaf and a plate garnish.
These cues are Mizuna's, and hold across its varieties; where this one differs, its own page says so.
