The Mimosa is a two-ingredient sparkling cocktail of chilled Champagne — or another dry sparkling wine — and freshly squeezed orange juice, combined gently in a Champagne flute and served cold without ice. It is the archetypal brunch drink: pale gold, lightly fizzy, fruit-fresh and easy-drinking, lower in strength than a spirit cocktail because it is cut roughly half-and-half with juice. Named for the bright yellow blossom of the mimosa tree, Acacia dealbata, it is usually traced to the Ritz hotel in Paris in the 1920s. It is listed among the official cocktails of the International Bartenders Association, which treats it as synonymous with the British Buck's Fizz.
