Milkshake

A milkshake is a cold, thick, sweet drink made by blending milk and ice cream with a flavouring — most classically vanilla, chocolate or strawberry — into a smooth, aerated, spoon-coating liquid. It is an American soda-fountain and diner institution, served very cold in a tall glass with a straw and often topped with whipped cream. Thick or thin, the milkshake is a dairy treat, rich in fat, sugar and protein, and one of the defining drinks of the twentieth-century lunch counter.

A vanilla milkshake reads first as cold cream and rounded vanilla over a frankly sweet, milky body, with a soft caramel-and-butter warmth from the dairy fat and a thick, spoon-coating texture; it is sweet and rich rather than sharp, the faint savoury and bitter notes only grounding the sweetness. Chocolate and malted versions layer cocoa and toasty malt over the same creamy base.
