Milk thistle seed is the small, hard, glossy fruit (achene) of Silybum marianum, a spiny Mediterranean thistle. Mildly bitter and faintly nutty, the seed is best known as the source of silymarin, a flavonolignan complex long used in herbal liver tonics and brewed as a tea or ground into a meal.
