Skim milk — also called nonfat or fat-free milk — is cow's milk with virtually all of its cream removed, leaving the lowest-fat, lowest-calorie grade of fluid milk. It is thinner and more watery than whole milk, with a slightly bluish-white cast and a cleaner, less rounded flavour, but it keeps essentially all of milk's protein, lactose and calcium intact. At roughly a third the calories of whole milk and with almost no fat, it is the dairy choice for people watching saturated fat or energy intake.
These cues are Milk's, and hold across its varieties; where this one differs, its own page says so.
