Michelada

The Michelada is Mexico's classic beer cocktail — a cold lager built over fresh lime juice, savoury sauces and spice, poured into a tall glass whose rim is crusted with chili salt and served over ice. It is the most famous of the cervezas preparadas, the family of "prepared beers" dressed up with lime, salt and seasoning, and it tastes nothing like the plain beer it starts from: tangy and bright with lime, savoury and a little salty from Worcestershire and soy or Maggi sauce, warm with chili heat, and long and refreshing over the ice. It is a brunch and beach-day staple across Mexico and the Mexican-American south-west, equal parts drink and snack.

A long, ice-cold beer cocktail that smells of fresh lime and savoury sauce over light lager malt. The first taste is sour and salty — lime juice and the chili-salt rim — then a wave of umami from Worcestershire and soy or Maggi, then chili heat, all carried on the beer's malt and lively carbonation. It finishes savoury, tangy and refreshing rather than sweet; the tomato or Clamato version is rounder, redder and more like a spiced beer Bloody Mary.
