Spirit
Mezcal
Mezcal is the smoky, artisanal agave spirit of southern Mexico — tequila's older, wilder cousin — distilled from agaves whose hearts are roasted in wood-fired earthen pits, which layers a pronounced campfire smoke over earthy, mineral, citrus and roasted-agave flavours. It is traditionally sipped slowly, neat, with orange slices and a dusting of sal de gusano.

by taste profile
A clear-to-pale-straw spirit of about 40 to 50 percent alcohol, smoke-forward but complex: campfire and ember smoke over roasted, earthy cooked agave and wet-stone mineral notes, bright lemon-lime citrus, green herbal and vegetal touches, and a strong peppery pungency over a faint cooked-agave sweetness and light bitter-herbal grip, all carried on a warming alcoholic heat. Joven is clear and smoke-bright; oak ageing into reposado and anejo softens it with vanilla and gold colour.
