Mauby

Mauby is a bittersweet Caribbean beverage brewed from the bark of small trees in the genus Colubrina, boiled with warming spices, then sweetened and chilled. Dark amber to deep brown, it opens on a root-beer-like sweetness and finishes with a clean, lingering bitterness from the bark's natural saponins. Traditionally it was left to lightly ferment and develop a head of foam, though most versions today are non-alcoholic soft drinks. Known as mauby in Barbados and Trinidad, mavi in Puerto Rico and mabi in Haiti and the Dominican Republic, it is one of the iconic homemade refreshers of the region.

Mauby smells and starts like root beer or sarsaparilla — warm cinnamon, clove and licorice-like anise over a woody, resinous bark note — but the sweetness gives way to a firm, clean, lingering bitterness and faint astringency from the bark's saponins. Served cold and, in the fermented form, lightly frothy, it is sweet on entry and bracingly bitter on the finish, a balance that defines the drink.
