Mastika
Mastika (also mastiha) is a clear, sweet Greek liqueur flavoured with the aromatic resin of the Chios mastic tree — a piny, faintly medicinal, cedar-and-pine note found almost nowhere else in the drinks world — traditionally sipped as a digestif across Greece, the eastern Mediterranean and the Balkans.

Sweet and softly resinous, mastika leads with the unmistakable aroma of Chios mastic — pine, cedar and juniper crossed with a cool, incense-like, faintly medicinal sweetness — over a clean grape-spirit base with a light herbal lift. Neat it is warming and lightly sweet with a rounded, slightly syrupy texture at around a quarter to a third ABV; chilled or over ice it turns cooler and more perfumed, the resin blooming and the finish stretching long, clean and piny, an aromatic palate-cleanser that resets the mouth after a rich meal. It is drier and less viscous than a cream or almond liqueur, its whole character built around that single, distinctive resinous note.
