Manouri is a soft, fresh Greek whey cheese made from the whey left over after feta or kasseri is drained, enriched with sheep's or goat's milk and cream. Snow-white, dense and silky, it is milder, creamier and far less salty than feta — mild milky-sweet rather than tangy — and is eaten fresh with honey and fruit, sliced into salads, or lightly pan-seared.
