Mango lassi is a cooling South Asian yogurt drink blended from dahi, ripe mango pulp and a little sugar, sometimes scented with green cardamom, into a thick, tangy, creamy pour the colour of sunset. It is the sweet, fruity cousin of the older savoury salted lassi of the Punjab, where whisked yogurt thinned with water is the everyday refresher; the mango version trades the salt and cumin for ripe fruit and sugar, and has become the drink most travellers meet on the menu of an Indian restaurant.
