The Kesar is the saffron-coloured queen of Indian mangoes, a small-to-medium, plump, rounded fruit with a distinctive curved beak at the tip and a thin green-blushed orange skin that hides flesh of an almost startling deep saffron-orange. Named for kesar, the Hindi word for saffron, it is grown above all in Gujarat — on the slopes around the Gir forest and Junagadh, where the registered Gir Kesar carries a Geographical Indication — and is prized for intensely sweet, fragrant, low-fibre pulp that is the classic base of aamras and canned mango pulp.
