Mamey sapote is the large, football-shaped fruit of Pouteria sapota, a tall evergreen tree of the sapodilla family native to Mexico and Central America. Its rough, russet-brown skin hides a dense, smooth, salmon-to-russet flesh that tastes at once of sweet potato, pumpkin and almond-honey, with the texture of a soft baked custard. Across Latin America and the Caribbean it is above all a fruit for blending — folded into milkshakes, ice creams and the iced drinks called batidos.
