Malted milk

Malted milk is a sweet, creamy beverage made by stirring malted-milk powder — a dried blend of malted barley, wheat flour and whole milk — into a glass of fresh milk. The powder gives the drink a distinctive toasty, biscuity, faintly caramel malt flavour over a soft dairy body, and it can be served cold or hot. Invented in the 1870s as a nourishing food for infants and invalids, it went on to become a soda-fountain staple and the defining flavour of the American "malt" or malted milkshake. It is non-alcoholic and naturally rich in the toasted-grain notes that come from malting.

A glass of malted milk reads first as warm, toasty malt — biscuity and faintly caramelised, with a whisper of cocoa — over a soft, creamy dairy body; the taste is gently sweet with a rounded, milky richness and the barest savoury, slightly bitter malt edge that keeps it from being cloying.
