The mallard (Anas platyrhynchos) is the most abundant and widespread dabbling duck in the world, and the wild ancestor of nearly all domestic ducks. As game, its lean, deep-red breast meat is prized for a rich, faintly livery, grass-and-grain flavour that is markedly leaner and gamier than farmed duck.
