Macadamia oil is the pale golden, buttery fat pressed from macadamia kernels, the nuts of the Australian trees Macadamia integrifolia and M. tetraphylla. Mild, faintly sweet and exceptionally rich in monounsaturated fat, it is prized as a delicate finishing and salad oil, though its high oleic content also makes it one of the more heat-stable nut oils.
