Lúcuma (Pouteria lucuma) is a round, green-skinned subtropical fruit of the Andean highlands of Peru, Chile and Ecuador. Its bright golden-orange flesh is dry, dense and starchy with a distinctive flavour likened to maple, caramel and sweet potato — earning it the nickname "gold of the Incas." It is rarely eaten fresh and is overwhelmingly used as a dried powder to flavour ice cream, desserts and shakes.
