Liverwurst — Leberwurst in German, also sold as liver sausage or, in its softest form, Braunschweiger — is a cooked sausage built around finely emulsified liver and pork fat, seasoned with onion and warm spices. Smooth and spreadable to firm-sliceable, pale pinkish- grey to tan, it tastes richly savoury and faintly mineral, with the soft, almost buttery mouthfeel that liver and fat give when ground to a paste.
