A limpet is the chewy, briny foot-muscle of a marine snail that clamps to rock under a simple conical "Chinese-hat" shell. Gathered from wave-battered shores at low tide and most often grilled or stewed, it is humble shellfish — strongly flavoured, faintly iodine-and-mineral, and famously tough unless cooked with care.
