Lemon sole (Microstomus kitt) is a small, smooth-skinned right-eyed flatfish of the north-east Atlantic and North Sea — not a true sole at all but a member of the right-eye flounder family. Despite the name it owes nothing to the citrus fruit; its flesh is white, soft, fine-flaked and delicately sweet, a popular and more affordable alternative to the prized Dover sole.
