Lap cheong (also romanised lap chong, larp chong or laap cheung) is a hard, dried, sweet-savoury Chinese pork sausage flecked with white fat and tied off into stubby links. Sticky-sweet and deeply savoury, faintly boozy and umami-rich, it is steamed on top of rice, sliced into stir-fries and clay-pot dishes, and tucked into glutinous-rice dumplings and fried rice across southern China and the wider Chinese diaspora.
