The langoustine (Nephrops norvegicus) is a small, slender, pink-orange clawed lobster of the cold North Atlantic and Mediterranean, known in Britain as the Dublin Bay prawn or, once shelled and cooked, simply as scampi. Beneath its delicate shell lies a sliver of sweet, fine-grained tail meat that ranks among the most prized — and expensive — seafoods in Europe.
