Lancashire is a cow's-milk cheese from the historic county of Lancashire in north-west England, famous for a soft, buttery, crumbly body and a clean, lactic, lemony tang. It exists in three quite different guises — the traditional "Creamy" and longer-aged "Tasty" cheeses, built from curd blended across two or three days' milkings, and the modern factory-made "Crumbly" pressed from a single day's curd.
