Lamb shoulder is the cut from the upper foreleg and shoulder of the young domestic sheep (Ovis aries) — a hard-working, well-marbled group of muscles rich in collagen and fat that rewards long, slow cooking with deeply savoury, fall-apart tenderness. It is the classic cut for slow-roasted shoulder, Moroccan mechoui, Indian and Persian curries, and pulled-lamb braises.
