A lamb loin chop is a cut of lamb (Ovis aries) sliced across the saddle — the loin section running along the lower back of a young sheep — usually carrying a small T-shaped vertebra with the loin eye on one side and a sliver of tenderloin on the other. Tender, fine-grained and richly marbled, with a firm curved rim of white fat, it is a prized fast-cooking cut, grilled, pan-seared or roasted.
