La Louisiane
La Louisiane — also written À La Louisiane, "in the Louisiana style" — is a rich, spirit-forward New Orleans classic built on rye whiskey, sweet vermouth and Bénédictine, laced with absinthe and Peychaud's bitters. Stirred and served up in a chilled coupe with a cherry, it is the house cocktail of the old Restaurant de la Louisiane and a close cousin of the Vieux Carré.

Deep amber-red, La Louisiane opens with the honeyed, saffron-and-spice perfume of Bénédictine and a bright anise-fennel lift from the absinthe, over the dry peppery grain of rye and the herbal, wine-like sweetness of sweet vermouth. Peychaud's bitters thread a rosy gentian-and-cherry-anise note through the whole drink. On the palate it is warm, rich and layered — sweet but not cloying, with a spiced botanical depth, a whisper of woody rye tannin, and a long, herbal, faintly bitter finish at around 30 percent alcohol in the glass. It is a slow, contemplative sipper, best served up and very cold.
