Liqueur
Kümmel
Kümmel is a clear, sweet, colourless liqueur flavoured with caraway, cumin and fennel — its name is simply the German (and Dutch) word for caraway — of Dutch and German origin, drunk as a digestif and cherished as a cult clubhouse dram, the so-called "bar-room whisky of the greens" among golfers.

Water-clear and deceptively bright, kümmel leads with an unmistakable warm caraway aroma — the same rye-bread, seedy pungency of a good pumpernickel — laced with anise-like fennel and a low, earthy hum of cumin. On the palate it is sweet and lightly syrupy from its sugar, but the spice keeps it clean and dry-edged rather than cloying, and the caraway carries through a warming, faintly medicinal finish. Chilled hard, it turns almost oily and concentrated, the spice sharpening; at room temperature the sweetness and the anise come forward. The alcohol is spirit-strength at around forty percent but well cushioned by sugar.
