Kohlrabi (Brassica oleracea var. gongylodes), sometimes called the "German turnip," is a cool-season brassica grown for the round, swollen above-ground stem that bulges out just above the soil and sprouts a crown of long-stalked, kale-like leaves. Peeled, the crisp pale flesh is juicy, mild and faintly sweet — a clean cross of cabbage, broccoli stem and radish — eaten raw in slaws and batons or cooked like turnip, and it is the same species as cabbage, broccoli, kale and Brussels sprouts.
