Kirsch
Kirsch, or Kirschwasser, is a clear, unaged cherry brandy from the Black Forest, Alsace and Switzerland, distilled from fermented whole black morello cherries crushed together with their stones. Bottled around 40 percent alcohol and deliberately water-white, it is bracingly dry rather than sweet, leading with fresh cherry and a distinctive bitter-almond note from the pits, and stands apart from the sugary red cherry liqueurs it is often confused with.

Bone dry and bracing, Kirsch bursts with fresh sour cherry and a clean stone-fruit fragrance underpinned by an unmistakable bitter-almond, marzipan note released by the crushed cherry pits. There is no oak and no sweetness — the spirit is water-white and tastes purely of fruit and kernel, with a faint floral lift and a whisper of green cherry-skin. The texture is light but warming at around 40 percent alcohol, with a clean, dry, slightly nutty finish that lingers on almond and cherry rather than on wood.
