Kelp is a group of large brown seaweeds (order Laminariales), chiefly species of Saccharina and Laminaria, that form towering underwater forests along cool, rocky coasts. Harvested fresh or dried, it is a cornerstone of East Asian cooking — the backbone of Japanese dashi — and is prized for its deep savoury (umami) taste and high iodine content.
