Kasseri is a semi-hard, stretched-curd (pasta filata) cheese of Greece and Turkey, made chiefly from sheep's milk or a sheep-and-goat blend and matured for several months. Pale straw to golden, it is supple and springy with a mild, salty, tangy flavour, and is famous as the melting cheese for the fried Greek meze saganaki.
