Kashkaval is a stretched-curd (pasta filata) cheese of the Balkans, Turkey and the eastern Mediterranean, traditionally made from sheep's milk and today often from cow's milk or a blend. Firm, pale yellow and semi-hard, it is the region's everyday table and melting cheese — sliced for sandwiches, grated over dishes, and fried or grilled until golden.
