Micro kale is ordinary kale (Brassica oleracea, Acephala group) harvested as a microgreen — a tiny seedling only a few centimetres tall, cut about one to three weeks after sowing once its first pair of true leaves appears. Eaten raw as a garnish, salad green or smoothie addition, it delivers a remarkably concentrated, sweet-and-savoury kale flavour without the toughness and harsh bitterness of the mature leaf.
These cues are Kale's, and hold across its varieties; where this one differs, its own page says so.
